A Cornish Game Hen is a breed of chicken which is a cross between a Cornish and a White Rock chicken. Cornish game hens are quite small about 2 1/2 pounds. The birds are typically stuffed (wild rice stuffing is traditional) and roasted serving 1 per person. See link to chart to learn about the most common varieties of chicken used for food.
