What is Confit
A specialty of France, confit is meat (commonly duck or goose) salted and cooked in its own fat. Once cooked the mixture is packed into earthenware pots and toped with more fat. To use, the intensely flavored confit is warmed and crisped and served with potatoes or other side dishes.
Substitute for Confit
There is no good substitute for duck confit.
