Coconut sugar is a low-glycemic sugar made from the sap of the coconut palm tree. You can use this sugar in any recipe that calls for white granulated or brown sugar. The flavor is very similar to brown sugar with just a little more flavor.
The texture of the sugar is more granulated than brown sugar and is not sticky like brown sugar but not as free-flowing as granulated sugar.
Look for organic coconut sugar in Whole Food's Markets or other well-stocked health food stores. It has become popular so your local main-stream larger markets may carry it. Trader Joe's stocks their own brand. You can also purchase it online at Amazon.com
