Cockaigne, a term in medieval times signified "a mythical land of peace and plenty". Authors of the famous Joy of Cooking cookbook named their country home "Cockaigne". Many readers asked the authors which recipes were their favorites so to indicate these selections they included the term "Cockaigne" in the recipe name. You can read about this in the Forward section of the Joy of Cooking cookbook.
