Ground cinnamon is a common spice usually made from ground Cassia cinnamon rather than true Ceyon cinnamon. Look for the more pungent ground Ceylon ground cinnamon (canela) in Mexican markets or grocery stores. Otherwise the most common ground cinnamon is Cassia.
