Chorizo is a traditional pork sausage from Spain that is available both spicy and hot. Unlike Mexican chorizo, the Spanish sausage is dry cured and ready to eat. The sausage is used in slices to flavor paella or can be added to beans, soups or stews. This sausage is spiced with choricero chiles.
