Chocolate Extract (pure chocolate extract) is a flavoring made by soaking cocoa beans in alcohol. The resulting liquid is a dark brown, pungent extract. Chocolate extract is used to help enhance the flavor of cakes, cookies, ice cream, any recipe that uses chocolate in the ingredients. Although you can use it as a replacement for chocolate its primary purpose is to add depth to recipes that already use chocolate. This is natural flavoring, not artificial. Do beware there are artificial extracts available too.
This ingredient is not always easy to find at your local grocer but here are a few places that have been know to carry it. There are at least two reliable brands. Nielsen Massey makes a chocolate extract (shown in the image at the top of this page. This can be purchased at Amazon.com. Pure Chocolate Extract.
The other brand is Star Kay White. David Lebovitz swears by this brand. The company has been making extracts for the ice cream and confection manufactures dating back to 1890. This brand is a little harder to find. Some Whole Foods Markets carried it at one time. There is a seller on Amazon but the price is extremely high.
