What are Chilaca chiles?
Chilaca chiles are fresh dark green chiles with a similar heat to a poblano. They are long and thin at least 5 - 6" and about 1" wide at the shoulder. When dried, chilaca chiles are called pasilla or chile negro.

Chile Chilaca Salsa
This recipe for Chile Chilaca Salsa is a fresh (salsa fresca) salsa which can be used with tortilla chips or use atop a taco or any dish that would benefit from a simple fresh salsa. Includes garlic, onion, and Mexican oregano.
Ranchero Sauce
This is a less traditional Ranchero Sauce recipe used for huevos rancheros, chile rellenos or omelets. The sauce uses fresh tomatoes, roasted chilaca chiles, onions, Mexican oregano cilantro, and fresh mushrooms.
Chilaca Chile Snack (Botana de Chilacas)
Chilaca chiles are mild dark green chiles. In this recipe the chiles are charred then sliced into thin strips then blended with the rest of the ingredients and left to sit for 30 minutes. This can be eaten as snack or as a side dish to chicken or fish. No cooking required!
