Chia is sold in seed form from the herb S. hispanicum. The seed is very high in Omega 3's as well as protein and fiber. Chia became most famous in the U.S. in the 1980's when Chia Pets were sold. Chia pets were small terracotta animal figures with grooves which housed the chia seeds. The figure is watered and the chia seeds sprouted giving the creature a living "green" coat. The image displayed shows an animal figure with sprouted chia.
Today Chia is used in whole seed form as well as ground. Chia can be added to cereals, smoothies, salad dressings and even pudding style desserts.
