Cerignola olives, Bella di Cerignola is a luscious large olive that is named after the town of Cerignola, Italy. These olives are typically packed in oil and sold in jars or cans. You can find this olive in three colors, green, black, and red. The red olives do add color to enhance the natural hue.
These olives are D.O.P. protected which means they can only be grown in the region of Foggia in Puglia, Italy. The olives are put in a lye bath, then soaked in a natural brine for about 4 weeks.
Use these, mild, buttery olives on your cheeseboard with Parmigiano Reggiano, salami, and crusty bread. Serve with a Bardolino wine. This olive makes an impressive martini olive too.
