Bleu d'Auvergne Cheese is a soft-rind blue cheese from France made from cow's milk. The flavor is nicely spicy and salty yet creamier and less pungent than other blue cheeses. Bleu d'Auvergne is excellent in salad dressings or use in a pasta sauces or part of your cheeseboard. This bleu is typically less expensive than Roquefort and makes a good substitute.
