Pepper is probably the world's most popular spice. Peppercorns are the berries from the Piper nigrum plant. The partially-ripened berries are dried to produce the black pepper familiar to most of us. Pepper is best ground fresh with a peppergrinder.

Jalapenos en Escabeche are pickled jalapenos very popular in Mexico as well in the United States. This recipe includes carrots and onion and uses garlic, peppercorns for the seasonings.
