Bittersweet chocolate is chocolate which contains at least 35 percent chocolate liquor and sugar. Used in desserts, bittersweet chocolate provides a very rich, deep chocolate flavor. If chocolate is the primary flavoring in your dessert then you should select a high quality product in order to produce the best results.
