Bison (buffalo meat) is high protein red meat with less fat and calories than beef. Bison meat is available in specialty stores in a variety of cuts including steaks, roasts and luncheon meats. The meat has also become popular in many high end restaurants.
Bison cooks faster than beef because the meat lacks the fat "insulation". It is best not to overcook the meat or it will be tough.
