What is Belgian endive?
A close relative of chickory, Belgian endive is grown in dark conditions such as barrels or boxes. This causes the endive to grow in elongated small heads light green to white in color. The leaves can be separated and eaten (makes a pretty platter) or the endive can the chopped or sliced for salads.
