Balilla rice is an Italian rice also referred to as "ordinario" or common rice. The grains are fat and round and are typically used in soups such as minestrone or in cakes but not for risotto. Baililla rice is not typically found in the U.S.
This rice cooks quickly, in about 10 minutes compared to arborio rice which takes up to 18 minutes to cook. Depending on the recipe, you can add 1 cup of rice (2:1 ratio) to 2 cups tap water and cover the pan. When it begins to boil, turn the heat down to low and allow it to steam for about 10 minutes. Drain off any excess liquid.
