Asperso is an aromatic spice mixture whose name translates literally to "sprinkle". The seasoning is is made up of salt, peppercorns, juniper berries, sage, rosemary, thyme, and red chili peppers.
The herb and salt concoction dates back to medieval times when it was used as a meat cure. Traditionally the herbs would be combined and stored in a terracotta urn until the salt is fully infused with the spice.
Crush the mixture with a mortar and pestle and then sprinkle on meats prior to cooking.
