The heart of the artichoke is the thickened portion right above the stem. After removing the exterior leaves and scooping out the "fuzzy" inner portion the heart is exposed.
In addition to fresh, artichokes hearts can be purchased canned or in jars or frozen. Marinated artichokes hearts are readily available as well. See our recipe for making your own.
