Found in the Mediterranean and Black sea, anchovy are small slender fish around 6" long. Anchovies can be prepared fresh but are commonly found salted, preserved in tins or jars or dried. Our favorite anchovies are from Italy and come packed in little glass jars.
Anchovies are typically quite salty and have a nice briny flavor. Use anchovies in salads, sauces, dressings and as an accompaniment with other dishes including Caesar Salads and even as a pizza topping.
The white anchovy can be found in gourmet shops. The small tins or glass jars preserved in oil are a common grocery store item in most areas of the U.S. Of course they are readily available online at Amazon.com and Walmart.com.

White anchovies are also known as Boquerones. These anchovies are imported from Spain and come marinated in olive oil. Use to top salads or use any dish that calls for anchovies. The white anchovy are less salty than other canned or jarred varieties and provide a slightly more delicate flavor.
