The Anasazi bean dates back to antiquity and were known to be cultivated by American Indians and in fact are named after the Anasazi Tribe. The beans have mottled burgundy white markings which fade out when cooked. Anasazi beans become very sweet when cooked. Use in any recipe that calls for pinto beans and pair them with hot chiles, cilantro and lime.
