What is Almond Paste?
Almond paste
looks like a lump of Play Dough. It is actually a confection made from blanched dried almonds, sugar, and a liquid such as glycerin or cane syrup. Almond paste is similar to marzipan except it is less granular and contains less sugar. Use almond paste in in cookies, cakes, candies and pastries. It is particularly popular in Europe.
Store indefinitely refrigerated. If the paste gets too hard you can heat it gently to soften it again.
Substitute for Almond Paste
If you don't have almond paste then here are the best substitutes:
You can use
marzipan
. It will be sweeter and more granular.
OR - For 3 tbsp almond paste substitute a mixture of 1/4 cup blanched, slivered (or whole) almonds ground to a paste then combined with 1 tablespoon granulated sugar.
