Abura-age is thinly sliced, deep fried tofu used for cooking with other ingredients -- primarily vegetables. It is typically available in a standard sizes of: 4 1/2" x 2 1/2" x 1/2" thick. It can actually be slit open and stuffed like you would a pita bread. This tofu is available frozen or fresh. It can also be used in soups and hotpot dishes.. Preparation It is always recommended to pour boiling water over the tofu before use to reduce the oiliness.
You can find Abura-age in Asian Markets. In Hawaii the aburage is prepared with shoyu (soy sauce).
