I don't know why my weight jumped up by 3 lbs the other day but it seems like it's taking me forever to drop back down. I guess it will, slowly but surely. My stomach was in a "toast and coffee" mood. I topped the toast with a couple teaspoons of butter. I did get hungry a little later and made a breakfast taco. The taco had a corn tortilla with a couple little slices of left over chicken meat, a few shreds of cheddar cheese and some taco sauce. It ended up being nicely filling.
Ignoring my recent calculation that shows how I'll gain almost 5 lbs by continuing my coffee with "real cream" habit, I prepped a fresh cup of coffee with 2 teaspoons cream.
I was not in the mood for anything lunch-wise I had left from my Nutrisystem stash. I spied a Healthy Choice entree in the freezer that I'd purchased as an "emergency" meal for my husband should I not be in the mood to cook for him. It was called Beef Merlot - Cafe Steamers. The packaging is a two-piece plastic affair that probably cost more than the food held inside. The top portion of the packaging holds the food above, not in the sauce which is held below. As the entree heats the steam rises from the sauce below and helps heat the foods above. The dish consisted of bits of steak, carrots, green beans and potatoes.
The flavor was sightly bland but not surprising given it was only 180 calories so it had to be pretty low in fat and probably kept the sodium down as well given it was after all a "healthy choice" meal. I didn't love love it but if you're hungry enough I'm sure you'd think it was great. What was a standout is that the vegetables didn't get mushy, the potatoes were downright al dente and the steak tasted like steak and not "overly processed" meat.
I started out intending to have 4 of my new favorite crackers with 2 wedges of Laughing Cow Light Swiss Cheese. Instead I ate 2 crackers and 1 wedge of cheese which seemed plenty. I did have another cup of coffee with some cream about an hour earlier.
Again nothing from my Nutrisystem larder sounded good. I mixed a can of tuna with a little mayo, pickle relish, and chopped green onion. I put some of it on a slice of Dave's Killer skinny bread and melted 1 ounce slice of cheddar cheese on top. This is a variation of something my mom used to make when we were kids. It tasted pretty good and they are nice and filling.
I really didn't need dessert but around 7ish.... My husband ate a Nestles Drumstick. I ate the chocolate and peanuts off the top, he had most all the rest. Ok, so not a great thing to eat but could have been worse.
It poured most of the day and that was my excuse for only going out for a few short walks. At least I went out a little. Today was a "no Nutrisystem" food day. I still have a few remaining foods but I'm pretty tired of them. It's best to leave them in the freezer and come back to them after I forget about them for awhile.
