I made a "farmer" breakfast today. I'm not sure why, I don't have big activities planned. I scrambled an egg and served it with 2 slices of bacon and a slice of Dave's Killer skinny bread. As it ends up, I'm glad I ate a big breakfast because I didn't eat again until dinner.
I had more 'desk' things to do and I worked through my snack time. I did take the time to boil Yukon gold potatoes and some eggs for a potato salad.
I headed out for a walk around noon time and it was already heating up. I needed to get back and get my potato salad assembled so it can season awhile before we have early Fourth of July dinner.
I did some "potato salad tasting" just to make sure it was seasoned properly (yes, really!) haha. I considered that my lunch/snack. I put the Chateaubriand in a marinade for a little over an hour.
I kept it super simple. I grilled the steak and I served with some potato salad. I also made an impromptu chimichurri sauce for the steak. It all tasted great if I do say so myself.
I had a 2nd serving of steak so I skipped a dessert.
It was a nice day and I didn't eat a lot which is a good thing. I got a little gardening in, a little cooking, and lot of relaxing. Hope you all had a safe and sane 4th! I hit the gym again in the morning. I'll check back in then.
