It's not a gym day so I took the time to make breakfast. I made my own version of the breakfast muffin. I've made these a couple times now. If you are going to make them, and you don't mind about 50 extra calories you should use the whole muffin and not just half because it would hold together better. I make mine open face. I also had about 4 ounces of V8 Juice (low sodium). This time I used a whole scrambled egg (sometimes I just use half). I toasted the muffin a little, topped it with 1 slice of Canadian bacon, heated that while I scrambled the egg. I topped the Canadian bacon with the egg then melted 1/2 ounce of cheddar cheese on top.
I also added a splash of real cream to my coffee.
I considered my coffee with cream my morning snack. I haven't walked yet today so it's not like I need more calories.
I finally headed out for a walk. My allergies are brutal today so my walk was pretty minimal. It's pretty warm out but not as hot as the last 2 days. When I got back I made an open face sandwich with a couple of slices of leftover steak from the other night, atop a slice of Dave's Killer skinny bread and about 2 teaspoons of mayonnaise. It's amazing how little 1 teaspoon really is! I cleaned another small carrot and served that on the side.
I really need to get off this cheese and crackers as a snack. I've been writing about cheese a lot lately and It makes me so hungry! I had about an ounce of Bay Blue cheese (very good stuff) and 5 Monet table water crackers.
I pulled a Nutrisystem Chicken Parmesan entree out of the freezer. I heated in my mini-convection. I really wish they could find a method to keep the chicken from being soggy. Nevertheless it tasted pretty good. I would have topped it with some fresh Parmesan but I did enough damage with the blue cheese earlier. I did have a side field greens salad with olive oil, balsamic vinegar and kosher salt.
Later, after dinner, I permitted myself to have 1/2 of a Nutrisystem Chocolate Cupcake.
I went a tiny bit overboard with calories. I've come to learn that given my metabolism and my activity level, 1200 calories is maintenance for me. I think I'm going to have to get back down to about 900 a day if I want to lose these last 10-15lbs. Tomorrow is gym day, hope that helps! See you Cinco de Mayo!
