No gym today and it's raining, again which means it's unlikely I'll get a lot of exercise today. At least I'm caught up with my blogs. Today I fixed a reasonable breakfast, one of my regulars. One egg scrambled, 1/2 of a whole wheat light English muffin and a slice of Canadian bacon.
I snacked on a stick of string cheese and had a couple cups of coffee, with cream. The rain and drizzle is not letting up but at some point I have to move and get a walk in.
I'm glad my roasted chicken thighs are almost gone, getting tired of this sandwich everyday. I had my usual open faced chicken sandwich, mayonnaise, kosher salt and pepper on Dave's Killer skinny bread. I cleaned some radishes and served those with a little Bolthouse Greek Yogurt blue cheese dressing as a dip.
Sadly I was tempted by some leftover Easter candy. I limited myself to 2 pretty pastel colored peanut M&M's. Later I had about 6 table water crackers with an ounce of Parmesan cheese.
I had one last frozen Nutrisystem entree so I heated that. It was the Nutrisystem Chicken Parmesan. I grated a little extra fresh Parmesan cheese and topped the chicken and the pasta. It helped a little. I did a quick side salad with a few things from the vegetable drawer.
Ok, so it's true confessions time. There was a little pie left over and out of the kindness of my heart, I helped my husband eat it. I had a thin slice with about 2 tablespoons Vanilla Bean ice cream. Then there was this Lindt chocolate gold bunny left on the table. I split that with my husband. Poor bunny, poor me haha!
These days are difficult when the weather gives me an excuse not to go outside. It really doesn't take much to discourage me. I did get an almost two mile walk in. If you're not a walker then that probably sounds like a lot but if you are, you know it's not much. Another gym day tomorrow. See you then!
