At least I ate a good breakfast. Sometimes my meal quality deteriorates as the day wears on. I made a scrambled egg, one slice of Canadian bacon and 1/2 of a whole wheat light English muffin, 1 teaspoon butter.
My morning snack merged with lunch.
I sliced some of my leftover chicken thighs and served it on a slice of Dave's Killer skinny bread, some mayonnaise and kosher salt and pepper. Open face sandwiches are hard to eat.
I had about an ounce of cashew nuts. I took a decent walk about 2:00.
So my meals were OK today but I didn't feel like eating more leftover chicken so I opted for some popcorn with a little butter and freshly grated Parmigiano Reggiano. This bowl is about 9" wide by the way.
Not exactly a snack but I had a 2nd bowl, half full of popcorn.
Not a bad day from a culinary standpoint but my meals have been lacking anything leafy green. I have cooking to do for tomorrow, Easter so I'm being lazy about meals. At least I got a pretty good walk in. I'll see you tomorrow, Happy Easter!
