These next few blog posts will be summarized because I'm traveling and I'm very behind. I didn't take a lot of pics but there are some. I did keep track of what I ate each day.
I wanted to head out early so I quickly scrambled an egg and served it with some sliced avocado, about 1/3 of banana sliced, and half of a whole wheat English muffin toasted and lightly buttered.
I had usual snack of coffee with some real cream.
Lunch was worth waiting for. I had some excellent chicken enchiladas with a light verde sauce. On the side were black beans, and rice. I ate most of the black beans but just had a few bites of the rice.
I skipped a snack because I had planned a nice dinner out.
Dinner was very good as well. I had a wonderful fresh salad with greens and fresh baby spinach with a very light dressing. The main course was a rib steak which I only ate a very small amount and saved the rest. There were some roasted fingerling potatoes, parsnip and carrot, very good. I also had a little creamed spinach.
I couldn't finish my dinner much less eat dessert.
I did a ton of walking, almost 8 miles, over 20k steps, double my daily goal. I kept my portions small but the calories were high on what I ate. This is the hazard of eating out.
