Back to where I was a few days ago. I've created my own maintenance plan haha!
Going to head out for a drive early so I just scrambled up eggs with some Portuguese sausage and green onions. I toasted a slice of my usual Killer Dave's skinny bread.
I found a great little health food store with a good stock of raw cashew nuts. I purchased a few and downed 18, about 1 ounce.
Once back at the old homestead I rustled up a half of a tuna fish sandwich. It was pretty bare bones, some mayo, green onion, bread, lettuce.
We decided to go have an order of one of our new favorites, the lobster deviled eggs. These eggs have a thin layer of really great quality olive oil below the yolk. Then you give them a spritz of fresh lime juice and they are pretty darn heavenly.
I ate two of these egg halves.
I had quite a bit of leftover cold rice and assorted vegetables, meats so I made another Barb's Maui Fried Rice. The fun thing about the fried rice recipe is you can substitute for whatever you have in the refrigerator.
It made quite a bit so now I have leftovers of the leftovers.
My husband had a nice big piece of coconut cream pie so I took an obligatory bite or two, or three.
I ended up spending more time in the car than I thought I would so I fell just short of my minimum step goal. I had more calories overall for the day than I could have but not a big deal. I'll check back in tomorrow, Sunday, have a good one!
