This breakfast image is almost too embarrassing to show but the breakfast tasted fine. I burnt my toast and I had a devil of a time turning the egg over AGAIN. Of all the cooking I've done in my life, even had some classes, I'll be darned if I can turn an egg over.
I just finished my first walk of the day a little over 6k steps; a couple of miles. I'm just about to froth up my standard Dr. Keith's Chocolate cream protein shake which makes a great snack.
I got a little shopping done and headed back to have a small lunch. I made a very haphazard half sandwich with a little Sonoma Blue Cheese and my usual Dave's Killer skinny bread and one lonely lettuce leaf. I was still a little hungry so I shared a Kirkland Nut bar. I'm over on calories compared to exercise so I'm going to have to get another walk in.
I'm skipping my snack (NUTRISYSTEM SAYS NOT TO DO THIS) but given my calories today I'll save them for dinner.
As I mentioned earlier I made a trek to the grocery store for provisions. With chicken thighs in hand (not literally) I decided to marinate the chicken then roast it. I scrounged around the web for a recipe that included some of the few things I had. I used it as a basic guide and created my Asian Chile Garlic Chicken. I'll update this page once I enter the recipe in the system. I steamed some rice and made a green salad with watercress, carrot, onion, cucumber and some blue cheese.
Here is the finished chicken dish which tasted pretty darn good.
Dinner was nicely filling. I had one chicken thigh, salad and about 1/3 cup of rice. I didn't have a snack but later in the evening (after another walk) I had about 1.5 ounces of cashew nuts. Thankfully, this time they didn't create the allergy attack I had last time I tried to eat them.
I probably could have eaten less but I think I did pretty well. I got a couple of walks in and I'll try to do better tomorrow. The chicken was great, you should try the recipe!
