It's gym morning so I'm keeping breakfast simple. I heated 1 Nutrisystem Buttermilk Waffle and scrambled an egg with a little Kirkland Extra Lean Ham. I washed it all down with my usual cup (or 2) of black coffee.
Most the time I have projects to complete when I get back from the gym and today was no exception. I didn't even take time for a walk after my workout. I was hungry so eventually prepared a simple snack of poached chicken slices, some fresh cucumber and little tomatoes and some Bolthouse Greek Yogurt Blue Cheese dressing.
I still have quite a few "shelf stable" foods I want to use up. Today I hydrated the Nutrisystem White Cheddar Mac and Cheese. This is the second time I've had this (read more about White Cheddar Mac and Cheese here) and my impression was the same. It was filling enough to keep me from being hungry but it is very bland.
I grabbed a quick ounce of Toscano Salami for my snack. Probably not the most healthy thing but it tasted good and kept calories down to about 80. I understand that ideally snacks should include fresh fruits or vegetables and/or some grains. Woulda, shoulda, didn't.
I've been avoiding trying this dinner entree. I finally heated the Nutrisystem Rotini with Meatballs. This is another MRE, shelf stable meal. The best I can say about it is that it was not horrible and it was pretty filling. Meatballs are simply something I don't typically eat.
I topped my pasta with a little grinding of fresh Parmesan cheese. I also served a small field greens salad and some fresh steamed green beans (green beans not shown).
I went a little overboard with calories by adding a little cheese here and there. I really need to steer clear of cheese. Even so I still opted for one of my higher calorie desserts the Kirkland Signature Nut Bar.
I did head out for a decent walk before dinner. Even so I still did not make my 11k steps goal. I think I'm going to reduce my "winter" goal to 10k because 11k just is not happening when the weather is wet or cold. Eating was healthy today despite too many "extras" for the day. I'll let you know how tomorrow goes.
