Yeah, 12 lbs down! Pretty good given I had plenty to eat and I'm being an exercise slug in comparison to the last month. I don't want to get used to this lack of exercise. Once I can confirm what is safe to do I'm going to get moving more again.
I really wanted to use up these "pastry" breakfasts I ordered. I had the Nutrisystem Double Chocolate muffin and black coffee. I had a short 5 minute treadmill walk after.
I'm going to try to mend my ways and get back to showing at least an ounce of meal creativity. Well, starting my next meal, haha. For this one I stock with my Dr. Keith's Chocolate Cream protein shake. Although I have to say this is much less enticing now that the weather has turned cool. I had another short walk, about 12 minutes outside.
I still have stock of Nutrisystem Grilled Chicken sandwiches so it made for an easy lunch. In the spirit of trying to revive a little creativity I made a tiny batch of gochujang mayonnaise. Gochujang is a Korean chile paste and mixed with a little mayo it makes a salty, tangy spread with a nice amount of heat. It really kicked up the flavor of the otherwise fairly bland sandwich. And, yes I still had lots of tomato to use up so I topped the sandwich with a thick slice and added a few cherry tomatoes on the side.
I haven't eaten sardines in a long time so this sounded like a nice protein and Omega 3 rich snack. I had 2.5, about 90 calories and served that with a slice of Killer Dave's skinny bread. I imagine some of you saying YUCK but I kind of like sardines, in small amounts.
I had a variety of things from the garden that I needed to use including eggplant, tomatoes, basil and bell pepper. Using everything I had fresh plus a purchased zucchini I whipped up a batch of Ratatouille or a reasonable facsimile thereof. It was not a lovely looking dish but it sure tasted good! I served that along with the Nutrisystem Mushroom Stuffed Chicken. I've had this a few times now. It was bland in comparison to the fresh ratatouille but still filling. It's funny but the one thing that stands out when you serve most any (not all) Nutrisystem meal with something fresh is that the Nutrisystem meal lacks flavor in comparison to the fresh food.
I'm still trying to whittle down my pile of "dry" Nutrisystem Snacks so I had the Walnut Chocolate Chip Cookies. They taste "OK". I'm not a store-bought cookie person so I put them in that category. Certainly not like any chocolate chip cookie my mom ever made (hers were AMAZING).
There were about 7 cookies in total. They were crisp, a cookie attribute I enjoy.
The back pain is still a pain so walking was very minimal again today. I enjoyed having a few "different" foods today with the Ratatouille being my fave. It was exciting getting down to that 12 lb mark. I still have 1/10 of a pound to go in order to treat myself to the new workout outfit. I shall remain patient and diligent!
