Oh well, what goes down sometimes goes back up. This is what I anticipated so it's not a big deal. I know I ate like a civilized healthy human being at dinner last night so I'll be rewarding in the end :-)
I'm right back in the saddle again for breakfast! I started off with the Nutrisystem Buttermilk Waffles (I've had these a few times now) with a side of Canadian Bacon (2 slices, 40 calories). I know, some of you are screaming NO NITRITES, but come on, let me indulge a little. I topped those waffles off with my non-syrup-syrup. The plate lacks color but it all tasted pretty good. Even when eating on my own I tend to stick to the same foods during the week, just because it's easy. I try to experiment and try new things on weekends when I have more time to fuss with food. I have to walk to town this morning for a quick appointment so I'll get a couple thousand steps in. I'll try to get on the treadmill too.
Well the quick appointment was a dental appointment that ended up not so quick. I won't even let that guy open my mouth without some form of anesthesia. HaHa. The numbing thing took extra time. Dr. Keith's Chocolate Cream shake tasted really good because it was past lunch before I got back. Even though I had to drink with a straw, it was still refreshing and I was getting pretty hungry. Considering I only drink a half portion it's amazing filling. If you watch your weight you should consider look into a protein drink that you can stomach (some taste dreadful) for a little extra boost and a good between meal snack.
I spent months not eating and the Dr's tried to get me to drink Ensure constantly. I couldn't stomach the stuff and it had an ingredient list longer than your small intestine (well, maybe not that long). My sister encouraged me to try Boost. It was a little lower on sugar but a little better overall. I like these protein drinks better.
I think lunch finally came after 2:00 so a quick Nutrisystem Hamburger hit the spot. You whip those puppies together in just a couple of minutes. It takes me longer to find vegetables in the garden and get them prepped than it does to heat the burger (even including my extra-crisping step I take in the mini convection oven). Is it anything like an In-And-Out Burger (my fave fast food burger)? No it is not BUT it is substantially less fattening and considering how hungry I was it tasted just great thank you!
Today I tried Entube's Curry Paste. Using my quick and dirty "mix with mayo" technique I made a quick curry mayonnaise for my burger. These little flavorful additions really make the otherwise mundane burger flavor pop. I just used 1 teaspoon, two would have tasted better but I'm trying not to overdo with fats, an old bad habit I have.

I put a few simple large cherry tomatoes on the side. I sprinkled them with salt & pepper and it rounded out a simple, fast lunch.
Today's afternoon snack never happened. Lunch was past 2:00 and I didn't want to eat late. In my opinion, eating one of your most caloric meals later in the evening is one of the easiest ways to pack on the pounds.
Right before dinner I did a 10 minutes on the treadmill so I'd at least have 11k steps for the day. My Nutrisystem Turkey Medallions with Mashed Potatoes really hit the spot tonight. I had another Eggplant to use up to so I roasted slices in the oven again with a tiny amount of olive oil and salt and pepper. I'm really loving these eggplants. They are the perfect size for two for a dinner side dish. On a different note, I was really surprised to learn (by reading the label, DUH) that the potatoes are in fact both flakes and granules mixed with some milk or cream product. They really have a pretty darn good flavor. I never understand the logic of instant mashed potatoes. What could be easier? Peel a potato or two, toss in pan with water, bring to a simmer, cook, smash, add whatever you add. Oh well.
I also tossed together a small cucumber, onion and tomato salad, threw in a little red wine vinegar, salt and pepper, that was that!
I guess I was hungry and tired but the dinner tasted just right to me.
I really didn't necessarily want the evening snack but I wanted to try it. This was the Nutrisystem Chocolate Peanut Butter Brownie. The picture looked good, the little brownie looked good but flavor? Not so much. For some reason the little swirl of hard peanut butter on top was really objectionable. I EVEN gave it to my husband to eat. I tried heating in the micro for 10 -15 seconds as many reviewers suggested but nope, just not for me. The shelf stable Nutrisystem Fudge Brownie is better in my estimation.
I stayed busy today so I didn't feel like I had much time to put my heart and soul into meal prep today. I'll really be jamming tomorrow to get lots of things done so it may get worse not better. Let's see what tomorrow holds. I'm pretty confident last night's dinner weight will go right back away. We shall see!
