Anyone who reads this blog regularly will be glad to hear I didn't have my usual breakfast today. I actually took a couple of minutes and and made a breakfast burrito (more or less). I used a whole wheat fiber enhanced tortilla and topped it with 1 1/2 eggs scrambled with some scallion and red bell pepper. I piled the filling on the warmed tortilla then topped it with a smooth red salsa and some crumbled feta cheese. There was too much filling to wrap it into a proper burrito so just folded it in half and ate it like a taco.
I headed out for a good walk, over 2 miles. When I got back I had one stick of light string cheese stick. While I was on my way back I also stopped for an iced coffee with my usual 2-3 tablespoons of half and half.
I was hungry by the time I got back. I made a quick lunch with fruit I needed to use up including some Honey Kiss melon and fresh blackberries. I had some little bits of cheese to use up too. I also had a few Finn Crisp crackers (very low cal). The serving below was for two of us
I had a variety of chores to do this afternoon. At some point I stopped and and another iced coffee with 2 tablespoons of cream.
I headed out for another walk before dinner. I've walked quite a bit today. That said I also ate quite a bit today. For dinner I pan fried a pork chop (little bit of oil) and topped with an herbed goat cheese butter with lemon zest, fresh thyme, salt, pepper and butter. I also roasted a red potato with some chopped rosemary, salt, pepper and a little olive oil. I served all the above with a fresh cucumber from my garden. I topped the cucumber with a little olive oil, lemon juice and salt and pepper.
I really didn't need a single thing more to eat but I did. I had 2 Hershey milk chocolate nuggets.
While I got a lot of exercise today I doubt it will make up for all the calories. That said all my meals were pretty healthy (cream and half and half notwithstanding). Hope you all had a restful Labor Day! See you tomorrow.
