I don't have gym today and despite the impending heat I decided to make another version of egg muffins. This one uses red bell pepper, scallions, eggs, ham bits and a little bit of white cheddar cheese. I had one of these for breakfast. I headed out for a walk while it was still decent out.
I had a quick stick of low fat string cheese. Not exciting but low cal and something to munch on.
I had some fresh melon leftover from yesterday as well as some prosciutto and toscano, cheese and bread. I didn't feel too bad about the calories because I'm headed out for another walk into town for an appointment. This plate was for 2, not just me.
I skipped a snack.
After my appointment I stopped for a light dinner. Even though it was pretty hot outside I select a small bowl, really a cup, of very good tortilla soup. The a/c was really cranked up so the soup was perfect.
I walked back home so I more than completed my step goal.
My calories were not totally horrible but way too low on fresh vegetables. I did eat some fruit at least. Hope you are all staying cool. See you tomorrow.
