I had leftovers to use up from yesterday's breakfast. I had some of my husband's leftover corned beef hash, then some avocado, some black beans and some of my tortilla/egg. I added a little wedge of Laughing Cow light Swiss cheese spread.
I headed out for a good walk after breakfast and skipped a snack.
I had a leftover roasted chicken thigh so I served that (cold) with some sliced tomato from my garden.
I made an appetizer to share with my husband. Some tomato, some cheese and little rosemary crackers. I headed out for one more walk afterwards.
I wasn't overly hungry but I found a recipe I wanted to try for a fresh corn salad. This ended up being one of the absolute best salads I've ever eaten. It was fresh and fabulous and so so simple. It uses a fresh ear of corn, fresh mozzarella cheese, fresh basil, fresh grape cherry tomatoes and scallions. I had more leftover chicken thighs so I cut one up in cubes and added it to the salad but you could easily leave that out.
Dinner was so great I didn't need anything else. I did tank up on some ice water.
I got a lot of steps in today! The meal of the day award goes to that fresh corn salad. Amazing! See you all next week!
