Even I couldn't take more berries and yogurt so I scrambled a simple egg with some green onion. Breakfast was a little skimpy but no gym today, walks only. I sliced a couple of little tomatoes to spruce up the plate a little.
I had a meeting with a sales person in my office this morning so I was busy at my typical snack time. I did have another cup of coffee. After my meeting I headed out for a walk, my first for the day.
I had leftover rice to use up. I heated 1/3 cup and placed that in a bowl. I had left over poached chicken breast so I chopped some of that and tossed it in my little cast iron pan with some yellow onion, zucchini and red bell pepper. I tossed it all together with a little soy sauce. This was just a variation on what I made yesterday. It's nice and fill and pretty healthy. Brown rice would be better but white rice just sounded good.
I didn't really feel like eating a snack but I had some errands to do that I could walk to. Kill two birds with one stone!
Although I was not feeling particularly ambitious I found a recipe I wanted to try for dinner. So this is a good time to mention a source I found a couple of weeks ago. I was unaware that Cooking Light has a Cooking Light Diet plan that sends you daily menus! It's an inexpensive service and it's a great way to get help with meal planning and healthy recipes. I've used some of the recipes but there are many I'd like to try. So tonight the recipe is Apple Pork Chops. I love easy one-pan recipes. Of course you could/should add a salad but I'd be lucky if I could finish the pork chop and apples. The recipe includes bone-in pork chops, red onion, chicken stock, apple, fresh sage and rosemary and a little Dijon mustard. I did slice one of my pretty Hawaiian Pineapple tomatoes and served that alongside.
I couldn't quite finish my dinner so I saved a little of the chop and apples to have tomorrow for lunch. I wasn't hungry for any additional snack.
I did manage to get all my steps in plus a couple thousand more. I feel good about my meals today. If all goes well I'll be back to the gym tomorrow. Catch up with you then!
