I had my quick usual pre-gym breakfast of yogurt, berries and granola. I headed right out at 7:00am for the gym.
I just took a very (very) short walk after gym. I didn't have my usual Nutrisytem shake just because I didn't want the extra carbs.
I did want a healthy, filling lunch. I set up my rice cooker and threw in a couple of cups of long grain white rice and set it on to cook. I had a couple of chicken breasts in the refrigerator. I removed them from their package, removed the skin and popped them in a pot with water and set them on medium to simmer. Once everything was done I chopped up the chicken and combined it with some scallions, chopped tomatoes and some soy sauce and lightly sauteed it all. I served the mixture over the steamed rice.
I took another walk, about 1 mile after lunch. I had an appointment at 2:00 and I had a few raw cashews and almonds while I waited.
I wasn't sure I'd be up for eating or what but I felt just fine. My husband and I walked into town, went to the post office then got a light dinner at one of our usual local spots. We each had a simple salad then we split a chicken quesadilla. Actually we each had one piece and took the other 2 pieces home.
It's a little hard to see but there are actually 4 pieces there. We ate 1 each.
Later in the evening I had about 1/4 cup of a low fat, low sugar, granola for a snack.
The day went easier than I'd thought. I got lots of good exercise, a small meal out; an otherwise uneventful day. I'll check back in tomorrow.
