Oh good lord! I eat 2 slices of pizza for the first time in over a year and right up goes the weight! I need to make amends. It's my intention to stay on the protein and fat side of the dietary equation today and lay low on carbs. I won't eliminate them but I want to keep them lowish. I had my same old, same old standby, yogurt, berries and granola. This granola has too much sugar. I only eat 1/4 cup of it. I probably will have to make my own granola to get the carbs down.
I got my first walk in to the farmer's market after breakfast. It was kind of cold out, 61F. Burrrr!
I still eat too much cheese but I really do try to curb my cheese binges. I sliced 1 1/8 ounces of Gruyere and had that as a quick snack.
Oh boy. What's that old saying? The road to hell is paved in good intentions? Lunch ended up being a slice of yesterday's leftover pizza. I need to shop. I didn't have a lot of options that didn't include a lot of prep which I didn't care to take the time for. Add to that I was really hungry and I wanted something NOW.
It's 2:00 and so far I haven't had any snack. I'm going to get another walk in pretty soon. I have just 50% of my steps in so far today.
You know how I am about the leftovers! I had leftover spaghetti sauce (homemade of course) from the other night to use up. That said I'm trying not to "overcarb" so I didn't want to boil pasta. Instead I hauled out my trusty Benriner spiral slicer and went to town on a zucchini I purchased at the local farmer's market this morning. After slicing the little vegetable I sauteed it with about a teaspoon of olive oil and a clove of chopped garlic. I heated up some sauce and poured it over the "zoodles". I topped the sauce with a little fresh grated Parmesan and tiny sprinkle of red pepper flakes.
I headed out for another walk because I was still shy on steps for the day. Even though it seemed like I had plenty to eat at dinner I was a little hungry when I got back. I had one ounce (measured) of raw cashew nuts. That would have not been too bad but later I had about 1/3 cup of a new snack which is way too good!
So, not a perfect day but it could always be worse! Tomorrow is a big day for me so I'm trying to get mentally prepared. I wish you all a good, safe, prosperous week. See you tomorrow!
