As well meaning as I am, I never seem to incorporate enough fresh vegetables into my daily diet. Well, that was before I started grilling and oven roasting, almost every vegetable I remotely like.
Just about any vegetable is improved with some olive oil, salt and oven roasting or grilling. I love these Brussels sprouts. Some of the thin outside layers got dark and crispy. Absolutely yummy!
Most the vegetables I've roasted take about 20 to 40 minutes to roast. Asparagus for example only takes about 20 minutes at 400F while my broccoli takes about 30 minutes.
One of my favorites is roasted cauliflower. I just take a couple cups of cauliflower cut into florets. I toss them with about 1-2 tablespoons of garam masala and a tablespoon of olive oil. Roast the cauliflower until it is tender about 25 minutes. Place on a serving dish and sprinkle with kosher salt. My mouth is watering just thinking about it!
