The French Laundry research team has come up with a winning combination of non-wheat flours to form a gluten-free flour mixture that can substituted for all-purpose flour, cup for cup. The ingredient list includes white and brown rice flour, tapioca and potatoes,potato starch, cornstarch and milk powder. This is big news for the growing segment of the population that needs to prepare gluten free meals.
New York Times writer Florence Fabricant (see article) states she gave it a try on a chocolate cake, pound cake, and pie crust and was quite pleased with the results.
The flour can be purchased at Williams Sonoma stores in 3lb sacks for about $19.95. We were unable to find it online as of today but you should contact your local store.
