Nabisco's Famous Chocolate Wafers were born in 1924 - a product of the National Biscuit Company, aka Nabisco. Technically a cookie the thin, crisp, dark chocolate wafers we popularized and have withstood the test of time for over 80 years.
The first chocolate wafer cookie was packed in a tin along with a ginger cookie and a sugar wafer. The ginger and sugar wafers have long since been abandoned but the chocolate wafer lives on.
One of the first published recipe uses for the wafer was Nabisco's Icebox Cake. The simple recipe consists of a stack of wafers with whipped cream in between, slathered all over more whipped cream to form a sweet "log". The log was then frozen.
Other classic uses for the wafer include crushed wafers used as crusts for pies and cheesecakes.
Although the wafers have been popular for so many years they can be a little hard to find. The trick is to look for them in the area where chocolate and other ice cream sauces are kept, rather than the cookie isle.
