Tamarind Syrup
Use syrup over poached fruit

I N G R E D I E N T S
½ tamarind pod,
shelled
1 tablespoon superfine
sugar
2 teaspoon water
1 lime, juice only
splash of white wine

N S T R U C T I O N S
In a small saucepan gently
heat the sugar, water, lime juice and wine until the sugar has melted.
Add the tamarind and continue to cook until a syrup forms.
