Soppressata

Soppressata, is also know as capocchia or copa di testa.  It is a pressed sausage from Italy made of the tongue, pork belly, head, stomach and various other bits of meat.  The meat is chopped in to small pieces cooked with spices then stuffed into a jute bag.  There are many regional Italian variations but the most famous is from Siena.  This version uses flavorings including coriander, black pepper, nutmeg, cloves, and cinnamon.  Another variation of this meat is called soppressata in cuffia. This is made by removing the bones from a pigs head and stuffing it with sausage meat.
