Halibut 4
tablespoons butter, melted
1 clove garlic, minced
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
2 tablespoons lemon juice
1/2 cup dry white wine
1/2 teaspoon dried dill weed or dried tarragon
2 tablespoons fresh chopped parsley
6 halibut steaks (about 3 pounds)

In a bowl make marinade by
combining first 8 ingredients. Arrange fish steaks in one layer in a shallow pan. Pour
marinade over fish; cover and marinate 1 hour. Remove fish from marinade and place in
smoker over medium heat using 2 tablespoons of alder smoking chips for approximately 25
minutes.
Serve immediately
garnishing with parsley and lemon wedges.
