Sudachi Ponzu Salad

Sudachi is a type of Japanese lemon.  This salad features a dressing made with a sudachi ponzu, olive oil, honey, shallots, mustard and garlic.

Ingredients

    • 1/4 cup Sudachi Ponzu (green label)
    • 2 tablespoon extra virgin olive oil
    • 1 tablespoon honey
    • 1 tablespoon finely chopped shallots
    • 1/2 teaspoon dry mustard
    • 1 clove garlic, minced
    • 3/4 teaspoon salt
    • 1/4 teaspoon ground pepper
    • 1 ripe avocado
    • 1 can (15 oz) mandarin oranges, drained
    • 1 package (8-10 oz) salad greens
    • 1/2 cup toasted pecans
    • 1/3 cup feta cheese

Instructions

Combine ingredients 1-8 (makes about 1/2 cup of salad dressing)

Toast pecans at 350 degrees (F) for 1 minute.

Combine salad dressing and avocados.

In salad bowl combine greens, mandarin oranges, pecans, feta cheese and toss with dressing.
