Sonoran Lime-Chipotle Basting Sauce & Mango Salsa

Drizzle sauce over fish, shrimp or vegetables while grilling and serve with the mango salsa.

Ingredients

    • 4 juice of limes
    • 1-1/2 bottles dark mexican beer
    • 1-1/2 tbl extra virgin olive oil
    • 3 canned chipotle chiles, mashed well with 1 tbl. of he adobo sauce from the can
    • 1/4 teaspoon kosher salt
    • 2 cloves minced garlic
    • 1/2 teaspoon Mexican oregano
    • paprika
  • Tropical Mango Salsa:
    • 1/2 cup roasted red bell pepper
    • 1 cup chopped mango
    • 1 cup chopped papaya
    • 2 habanero chiles with seeds, chopped fine
    • 1 cup fresh squeezed orange juice
    • 1 juice of key lime
    • 1 tablespoon fresh cilantro chopped fine
    • 1 teaspoon fresh mint leaves, chopped
    • 1 whole scallion, chopped fine

Instructions

Sonoran Lime-Chipotle Basting Sacue 
Whisk all ingredients together, except paprika. 
Drizzle sauce over fish, shrimp or vegetables while grilling. 
Sprinkle with paprika and serve.

Tropical Mango Salsa 
Mix all ingredients together. 
Let stand for 1 hour for flavors to blend. 
Use the same day that it is made.
