Mango-Papaya Relish

Use this fresh tropical relish with roasted meats or fish.  The colors brighten up the presentation and the flavors are a nice contrast to a protein.

Ingredients

    • 5 oz mango, cubed
    • 1/4 cup lime juice
    • 1/4 bunch cilantro, minced
    • 1 ea red bell pepper, macedoined
    • 1 ea green bell pepper, macedoined
    • 1 ea orange bell pepper, macedoined
    • 1 1/2 teaspoons kosher salt
    • 1/4 papaya cubed

Instructions

Mix all the above ingredients together and let cool in refrigerator for at least 30 minutes, allowing flavors time to combine properly.
