Chipotle Baked Beans

A thick bean recipe uses black, pinto and kidney beans baked with molasses, sausage, onion, brown sugar and chipotle paste.

Ingredients

    • 4 oz sausage, thinly sliced
    • 2 1/2 cups chopped onion
    • 1 cup chicken broth
    • 1/3 cup packed brown sugar
    • 1/3 cup cider vinegar
    • 1/3 cup dark molasses
    • 2 tsp dry mustard
    • 2 tsp. chipotle chile paste (see recipe link below)
    • 1/4 tsp Salt
    • 1/4 tsp ground cloves
    • 1/4 tsp ground allspice
    • 1 (15 oz.) can black beans, rinsed and drained
    • 1 (15 oz.) can kidney beans, rinsed and drained
    • 1 (15 oz.) can pinto beans, rinsed and drained

Instructions

Preheat oven to 325 degrees F.

Heat a Dutch oven over medium high heat. Add sausage, sauté 2 min. Add onion, and sauté 5 min., stirring occasionally. Stir in broth and remaining ingredients. Bake uncovered at 325 degrees for 1 hour.
