Recipe for Babalucci. Chiocciole is the Italian word for 'snails' aka 'escargot' in French. This Italian version simmers the snails in a basic marinara sauce

Ingredients

    • 75 snails (in shell)
  • Marinara sauce:
    • 2 28 oz cans crushed tomatoes
    • 2 tablespoons dried minced onion
    • 6 garlic cloves, minced
    • 1/4 cup chopped fresh parsley
    • 1/2 cup carrot juice or 1/2 grated carrot
    • 1 1/2 teaspoon dried basil
    • 2 teaspoon oregano
    • 2 teaspoon sugar
    • 2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 cup red wine
    • 3 tablespoons olive oil

Instructions

Combine all the ingredients and add snails, simmer for 1 1/2 hours to thicken sauce and flavor snails
